Minted summer tomatoes - Chatelaine Recipes

Makes 6 to 8 servings

Submit Ingredients 2 tbsp (30 mL) balsamic vinegar

1 tbsp (15 mL) olive oil

1 tsp (5 mL) granulated sugar

1/2 tsp (2 mL) salt

1/4 small red onion, thinly sliced

1 jalapeƱo, seeded and finely chopped

4 to 6 large tomatoes, preferably a mix of red and yellow

1/4 cup (50 mL) shredded fresh mint

1/4 cup (50 mL) crumbled goat cheese
